Description
The State of Tennessee seeks a single prime contractor to operate a full‑service dining facility for the Multi‑Agency Law Enforcement Training Academy (MALETA). The contractor will provide breakfast, lunch, dinner, special‑event meals, and box‑lunch services, handling up to 1,400 meals per service period (≈4,200 meals per day) over a five‑year term. Responsibilities include menu development, dietary accommodations, POS integration with the SEOS badge system, digital signage, equipment provision, emergency feeding plans, staffing, training, sanitation, and comprehensive reporting.
• Provide three daily meals (breakfast, lunch, dinner) plus optional weekend, holiday, and special‑event services.
• Accommodate vegetarian, vegan, gluten‑free, allergy‑sensitive, and religious dietary needs with a 24‑hour notice.
• Install and maintain three POS stations, integrate with state merchant‑service contracts, and display weekly menus on digital signage.
• Maintain 72‑hour on‑site food inventory, develop an Emergency Feeding Plan, and ensure compliance with USDA, FDA, and Tennessee health regulations.
